Can I change the default font in all the smartphones out there? (With Android 4 & up) ??

Yeah, with a samsung device pretty easily and with other one u need some to choose from launchers like 'GO Launcher EX'

Will I get a variety of fonts to choose or limited? How about Sony, Motorola and LG smart phones?

You can change system wide font on any device. But you need rooted phone. If it is rooted then here you go:

If it is not rooted. Get it root first.

Rooting gives access to edit system files. Rooting voids warranty too. Sometimes each device have different method. So you better tell me your device.

Ok. I just bought a new MOTO G (2nd Gen), I'm not going to do things that void warranty. I'll save that link and try it after the warranty's over. Thanks.
