So I ordered a new CPU, the new Skylake i7 6700k, and I am wondering if my current GPU set up will bottleneck.I have x2 GTX

Sure but your biggest issue is the fact you only have 2gb of vram, you have plenty of gpu horsepower to max out any game at 1080p with decent sli support with or without an overclock as long as that game does not use more than 2gb of vram when maxed out and a lot of new games are even at 1080p like gta v, fallout 4, bf4, witcher 3, far cry 3&4, shadow or mordor and others.

The best i7 for gaming today i believe is the 4790k and your processor is a bit better if im not mistaken.
And that 4790k will even handle sli 980ti so you should be good with gtx 660sli with that processor.

Do you suggest I OC the 660's? I'm new to the whole OCing gpus
I plan on switching to a single card in a couple more months when another paycheck comes in

If you are not happy about the performance and the temps isnt that high you could definetly overclock them.
