Which one would you choose for running Protools and Video software?

If this is for gaming it is very wasteful .
Even the most demanding games do not need even 16 gig of system RAM
Using a video card with only 2 gig of VRAM will cause isues though depending on screen resolution .

Since you can seemlessly migrate document folders to a conventional drive I would use the M.2 drive as a boot drive

M.2 and HDD combo.

It may not be as elegant or as boastful as a 2tb SSD, but the blazing speed of the M.2 drive can still be leveraged as a scratch disk if partitioned in conjunction with the HDD, thus speeding up your video stuff. I did this with my Samsung EVO SATA III SSD and it improved performance a bunch already.
