SSD + HHD in one comp?

So, I want to combine the speed of a SSD and the storage capacity of a HHD. the ones I think I'll buy are listed:
-WD Blue 1 TB
-Samsung 850 EVO 250GB 1 TB
So, I'm exactly sure, but I looked around and a couple sources say that you should first install the SSD, install your OS on it, then power off your comp and add the HHD. So my question is, how do I control where all my data goes. If i download some music off the internet, how would I make sure that it goes to the HHD, and when I download games and programs that I want to be fast, how to I make it go to the SSD? (I apologize if I am vague or don't make any sense at all, as I am new at this, and this is my first pc(sorry for long post). All answers are appreciated! Thanks in advance!
 
You have the right thinking having an HDD as storage to save space on the SSD as they are pretty expensive and reasonably small.
