SSD (new) won’t boot after fresh install of Windows 10, what now?

My SSD is first boot priority, and yes it’s SATA 0 and no there’s nothing wrong with the SSD. Said Windows won’t boot. I also have UEFI enabled and hot plug enabled etc.
My specs:
-Gigabyte: GA-Z170X Gaming 5- rev (1.1) BIOS 22F (latest)
-Samsung 860 EVO 250 GB
-Intel core i5 7600K

Did you try to Disable hot plug and try again?
Hot plug is not something you need in daily use and a potential reason for something to fail.

Did you install windows on this pc or some other (and transferred ssd to this pc) ?

Fresh install on this PC, you see I accidentally formatted my main drive with all of my info on it. So I had to (yes).

You should have started with that info about your main drive.
Most common possible issue with this is, your main drive most likely contained bootloader. Now you formatted it, bootloader is no more and system can not boot because of this.

If you did fresh install recently, then just reinstall again.

Another option is creating bootloader partition manually, but this is significantly more complicated than simple reinstall.
