I ran Exchange server on an old Dell AMD64 desktop for 8 years with no issues for my small business. I Just migrated to Exchange 2016 on Server 2016 on newer (but still old) hardware with more processing and memory and faster drives. But Exchange 2016 does more work to respond to client Web Mail requests than Exchange 2010 because of higher levels of encryption and more complex web code.
So I wanted to add SSD's for the OS and for the Exchange Database. My "new" but dated computer hardware still predates SSD's. Server 2016 of course supports TRIM, but does it matter if the computer doesn't know anything about SSDs
