I have already purchased a 1tb wd blue 7200 rpm and still need a faster storage device for my os and possibly games, what I want to know is if a 1tb hdd for games and photos etc with a 129l0gb ssd for the os is better, or a 1tb sshd for the os, games and software with the 1tb hdd for documents and photos.

SSHD primary benefits are when you only have the option for one drive (laptops etc).

They exist, and can be utilized in a desktop, absolutely - but they're still an HDD with a (very) small SSD cache drive.

An SSD + HDD pairing would be preferred, although I'd aim for ~240GB as a minimum. 120GB requires quite a bit of storage management time to avoid it filling up - and SSDs will slow down as it fills up too.
