Streaming and Gaming Build question

When it comes to a processor, which would be better for gaming and streaming

i7-6700k
or
i7-6800k

I would assume the 6800k but If im going to be gaming and streaming at very high quality, should I go for the two extra cores or is it not worth it? is there honestly much of a difference?

This is my current build idea build:

CPU: Intel i7-6700k
CPU Cooler: NZXT Kraken X61
GPU: EVGA Geforce GTX 1080 8GB SC Gaming ACX 3.0
MOBO: Asus Maximus VIII Formula
Ram: Corsair Vengeance LPX 16gb
SSD: Samsung 850 evo 500GB
HDD: WD Black series 2TB 7200RPM
PSU: EVGA 750W 80+ Bronze Certified Semi-Modular ATX

If anything I would change it to be a i7-6800k and change the mobo to a Asus x99A pro gaming carbon.

All I really want is to have the ability to stream and game at the highest possible settings for games like H1, CS, Bf, Arma, Overwatch, Rainbow 6 and much more (I'm 100% sure I won't be actually playing at the max resolutions but I want to know that I can if i wanted to) and to stream at the highest settings in OBS. Also this is a lot of money for me (Almost $2,000 for everything) So I want it to last for atleast the next 2 years.

yes/No, I already have keyboard, mouse, monitors, all that, I didn't include os or windows office but with those 2 it will be about 2k

I'm going to be getting one right after i build the pc but right now I have 2 asus 60hz monitors im going to use on the sides and the 144hz in the middle.

Thanks for the build, I was at the gym. But can you explain why the i7-6800k over the i7-6700k? I really don't know what would be the main differences when it came to gaming and streaming to make each one better.
