Streaming pc and gaming pc?

I was watching some twitch streams and noticed a lot of big streamers use a gaming pc and a streaming pc but that doesn't make scenes to me when I can use a i7-5960X and two titan x's then game and stream is there a real reason why streamers don't do that?

It is mostly because they want the ability to talk and type to viewers while playing the game.
Some games can be pretty finicky when alt+tabbed and other's when using a multi-monitor display.
In some situations, they may do it to crank a very demanding game to ULTRA settings with high fps.
