Streaming PC with video editing power

Hey all, just wanted some answers on specs and figured I could try my luck on existing forums before posting my own.
Looked at a couple and have some specs on some preowned systems at similar prices. I know the very basics on PCs but that's it. I just need it to stream my console play, and maybe edit videos for Youtube. I've heard just streaming, you can get away with a pretty cheap system.
1. VS450 Corsair Power supply (80 white), Gigabyte Aorus RX580 8gb, 6gb of RAM, Seagate Barracuda 500gb HDD, Gigabyte B85m Motherboard, Intel Core i5-4460, Running Windows 7 pro. Would buy new case for it.
2. MOBO: Gigabyte GA-890GPA-UD3H, CPU: AMD Phenom II X4 3.4GHZ, RAM: GSkill Trident 8GB, GPU: MSI Nvidia GTX 460 HAWK 1GB, HD: WD 1TB, SSD: Intel 120GB, PS: Corsair 620W, DRIVE: LG DVD Burner, CASE: NZXT Phantom Tower w/ Fan Control, COOLING: XSPC Watercooling System, FANS: 5x Silent GELID. (know nothing about AMD CPUs)
3. i5 6500 3.2GHz turbo to 3.6GHz, 8GB Team Elite DDR4 2400Mhz, Asus Strix GTX 970 4GB, AsRock B250M Pro4, Samsung 960 EVO 250GB NVMe, Cooler Master Hyper 212, Corsair VS450, NZXT case with side window, 2x Corsair 140mm fans (intake) 1x SilverStone 140mm fan (exhaust) 1x Corsair 120mm fan (exhaust)
4. CPU: I7-2600S 3.8GHZ, Graphics Card: GTX 960 2GB, Motherboard: Gigabyte GA-H77M-D3H, RAM: 2 x 4GB G.Skill Sniper, Storage: WD 120GB SSD and a 1TB WD HDD, Case: Thermaltake Case (would change case)
5. CPU: i7 3770k, CPU COOLER: Corsair h80i, MOBO: ASUS TUF Z77, RAM: 16GB G.SKILL RIPJAW X, GRAPHICS: Radeon HD6950, BOOT DRIVE: 128gb SSD, POWER SUPPLY: Corsair HX650, CASE: some thermaltake aero series thing (would change case)

What do you think? Would they do the job fine? Or should I look at slightly more expensive systems? With the systems that say would replace case, they look very crap or in bad shape. I should be buying a new one and paying someone to transfer all components over. Money isn't an issue. Just think it stupid to buy an overkill system that I won't utilise. Won't be gaming on it at all. Streaming and small video edits. Thank you :)

Budget from $400-700? Not entirely fussed. Just don't want a PC that's overkill for what Im looking to do.
