Where do I edit the cluster and stripe sizes, using raid-1.

You don't... RAID one doesn't create stripes, RAID one writes the data contiguously on 1 drive, the second drive is simply a second copy of the same data written to the first. If you're using RAID 10 (0+1) you will be able to select the stripe size on the RAID 0 portion.
