Founders edition is $700 GTX1080 will be $600.
Putting two in Raid 0 doubles the chances of data failure. Either use them in separate config or go for single one.

I agree that raid 0 is dangerous for your data. I did some research and found that putting them in raid 0 will not increase load time that much. I would wait an extra 2 seconds for gta v to load if it means not dealing with the headache one can have after a dead drive in raid 0. https://www.youtube.com/watch?v=KGSn08ZwvTc
