I have a 1TB HDD installed on my PC, as drive F:
I want to know if I just unplug it and put a new 8TB HDD in its place, will Windows 10 recognize it and make it as my F: drive?

I have no programs instelled in this drive, although some programs are configured to load/save to this drive. If I could just swap the drives and keep the path, that would be really nice.

Solution
if you swap them, windows will use the first available letter, in this case F:.
if it does not you can tell windows which drive letter to use for whichever drive you choose (excluding the C: ) in the disk management console.

ideally you would copy the drive and replace it so all the files and shortcuts would be copied. then you can format the replaced drive and install as more storage or otherwise use it.
