If my current video card is using 2 PCI-E ports from the power supply, would it be okay to switch to just 1 PC1-E port?

Are you asking if you can remove one fo the two power connectors from your existing card? Or are you asking if you can drop in a new card that requires one connector less than your previous card?

If the latter then you won't have any issues. The only thing you're going to need to pay attention to is that you've wiped the previous drivers using DDU and then installing the latest drivers from the manufacturers site.

If the former, the card came with a set number of power connectors to connect to the PSU, otherwise the manufacturer would've logically just opted out of an extra power connector and saved some manufacturing costs in the process.

In short = make sure all the connections/connectors are populated.
