Sytem config for dynamic simulations

Hello,

I am 3d particle and fluid dynamics artist.I am planning to assemble a system good for maya fluid ,particle dynamics and realflow simulations.I am confused between I7 3960 extreme and dual 5645 xeon processors.If I overclock 3960 is it safe as I need to keep my system running for days.also which graphic card is better for my purpose 640gtx 4gb or quadro fx 4000
