I am planning a build for a friend, and want to know what to do when taking apart a psu. I want to do this for sleeving and cutting off the cables I won't be using

1. RAIDMAX. Just don't.
2. If you need to ask how to take apart a PSU...don't.

Buy a modular PSU.
No cable worries.
No dead member.
Plus you will void the warranty if you open it up. I assume they test PSUs at the factory, so the capacitors could still retain a dangerous charge. Generally not a good idea.
