I was wondering what the job title is for someone who designs video game case covers and/or game trailers. If you can, I was looking specifically for the title for Ubisoft.

Actually the designation differs for one Game Developer to other. Mostly Graphics/3D Artist in Ubisoft. I think they give their Trailer creation work to dedicated third party team outside Ubisoft like the Puppetworks (worked on The Crew video game trailer), who is one of many. So if you want to work in a Game Trailer creation for Ubisoft products, then you should start looking for job vacancies at Puppetworks - www.puppetworks.eu

But there are companies that explicitly advertise job vacancies with almost the terms "video game case covers", "game trailers" that you're looking for. Consider these job listing as examples:
