Temp up and down

Can someone help with what is going on here with the ups and downs as shown?
This is what I see when I come back after the computer has been idle for awhile.

"Min -130C" Lulz xD, the temperature monitors in the graphics card may be a bit dodgy, either that or the program might be glitching out a bit 😛
