Yea download MSI afterburner you can legit see everything with your gpu in that

Afterburner is great, but it won't show you a chart exactly like that. They almost certainly made that chart using data points collected. But you will be able to see both clock speed and temp to try and make a graph yourself.

In GPUz, there's a "log to file" button in the bottom left corner. Then you import it into excel. That's how you make a graph like that. You can log many types of info.
