The only one of those I've played is Sands of Time, and no, it's not easier. Combat against bosses, which there are a lot of, can be quite difficult, as are hordes, and even platforming. The PoP series in general was known as a hardcore platformer. There are many quite difficult moves you have to string together and you can often fall to your death. There's also few checkpoints so a common scenario is having to replay lengthy sections.

Legend's final battle is not exactly easy on the hardest mode, but other than that, it's a fairly easy one. Don't know if you consider Underworld an older title, but it's easier than Legend or Anniversary.

If you love TR though, you might want to try playing the demo of the TR II PC remake. It's made using Unreal Engine 4 and looks fantastic. It's called Dagger of Xian.

You should be able to change difficulty settings, but that boss is really quite easy if you just do as shown in that video. Shoot the bell, dodge attacks when necessary, then release the cage above him when he's entranced by the bell, rinse and repeat.

As I said, I thought Underworld was easier than Legend, but for me it was mainly only noticeable when playing on the hardest modes. You have to be careful taking on Tigers and Panthers in Underworld though, and some puzzles can be a bit tricky.

What killed PoP for me though was the unrelenting combat. As far as I know Ubisoft have not officially said PoP is done. I have to wonder if they make another whether they'll do what Square Enix did with Tomb Raider, and turn it into more of an action adventure game than platformer with boss fights.

I have mixed emotions about new TR. I hate that they made tombs way easier, but the crafting and combat isn't too bad. IMO PoP though would be well served by such changes, though I know it would create a huge rift with the traditional fanbase.
