What I have heard about the e3 is that it's just a locked i7. Not sure if this is true.
I plan on playing some games, streaming, video editing, and using photoshop.
Is overclocking really all too big of a deal, or can I get by without it?

You are correct, it's a great way to get the 8-thread performance of an i7 for and i5 price. Overclocking does squeeze a bit more game performance or reduce rendering times out of the same chip.....but you certainly can have a great system without it.
Ya basically that is what that one is. OC helps performance some but for most people and situations it isn't really necessary just nice if you are willing to put up eith the increased heat/power use for some more horsepower from the same chip.
