The new PCIe 4.0 NVMe SSD drives such as the Sabrent Rocket NVMe 4.0 SSD or the Gigabyte AORUS NVMe Gen4 SSD come with some kind of heatsink on it, my question is whether or not you still keep these heatsinks on even when using them with a board like the x570 Aorus Xtreme. I see a lot of people just removing the heatsink and sticking in the card, but is there any reason for this or does the heatsink literally not fit on this board?

Perhaps reading this review of that motherboard will answer your question.

"Across the majority of the PCB, we get Aorus themed armor with three PCIe 4.0 x4 M.2 slots each with its own heatsink which moulds into the PCB cover. "

This part? In other words the M.2 slots have heatsinks built into the "armor"? Is there any way to tell if this heatsink works just as well as the ones that come with the hard drive / were designed for it directly?

Heatsinks on NVMe drives are not necessarily a good thing.
Not your particular parts, but...

In addition, some parts of the NVMe run better when warmer:
