Thinking of Building Mini ITX PC Using Old Components

This is my current pc:

Case: ATX NZXT-240 Elite BK/BL Tower Case
Graphics Card: MSI GTX1080Ti Gaming X 11GB
PSU: Corsair RM850X 850W 80Plus Gold
CPU: i7 8700K 3.7Gz CPU Box
Motherboard: ASUS MAXIMUS X HERO ATX MB
CPU Cooler: (AIO) Cooler Master Masterliquid ML240L RGB
Hard Disk: Samsung 960 Evo 250GB M.2. SSD
Ram: G.SKILL F4-3000C15D-16GTZR Trident Z RGB Series 16 GB(8 GB x 2)


I am moving abroad for a few months and don't want to bring my pc with me since it is quite big and heavy so I am planning to build a new mini ITX machine using my current components.

What I plan to use on my new mini ITX from my old machine:
Hard disk m.2. drive and the 16 GB ram.
The other components I will just leave it.

Don't want to use my coffeelake processor, as I am sure most air fans don't cool this well and afraid it will get too hot and overheat, also noctua fans quite bulky and don't plan to use AIO cooler for my build.

I am thinking of building a ryzen pc, 8 core preferably.
Can anyone advise and/or help me choose the best components to build this mini ITX machine, also I am on a budget of around $800 USD

Love those ITX builds.

In your situation, I think you would be better off to simply buy a good laptop.
You will be lots more portable than a pc box, monitor and keyboard.
You may also have issues with different power abroad.

Otherwise, start with the case.
How big can you tolerate?
How strong does the build need to be?

If you need a really small/portable case then look at the Raijintek Metis (Plus), the case is small considering it's ITX however it won't fit your current GPU.
