There are (possibly confirmed) rumors of the 800 series launching in september. It would be silly to build right now and put a 780 in there. If you can wait a month, I would advise it. I would wait until more information was given on them either way.
 
Case, go with whatever is aesthetically pleasing to the eye for you and still provides enough airflow inside the case. That's my suggestion.

Motherboard, stick with a LGA 1150 motherboard, The 2011 socket is way too expensive for an average gaming system.

CPU, you could just stick with an i5. Not much gains going up to a i7. Unless you do stuff like cad, video editing, live streaming, or other multithread intensive tasks, you really don't need to get the i7.

RAM, if you want 16gb of RAM, just go with the cheapest ram that's at least 1600Mhz and cas9 latency.

PSU, Corsair PSUs are a bit overpriced in my opinion. For the same price of some of the Corsair PSUs that are actually recommended, you could find a PSU of another brand that's probably either higher quality, better priced, or both. If you want a SLI set up in the future, I suggest a EVGA supernova g2 850w.

The 880 is supposedly $400-450. (american dollars). I mean, its obviously up to you. All I am is saying is that I would wait a couple weeks to see if more is revealed about the official specs and pricing.
 
If you're going to be overclocking, get at leasat a Coolermaster 212 evo. If not, the stock cooler would be sufficient in most cases, you could always just pick up an aftermarket cooler later on if you feel like the temperatures are too hot for your preference.
