I was also pretty concetnred about thermals, and was wondering if I should get case fans / cpu cooler. Also should have mentioned i won't OC anything

Yes for case fans. No on the 4x8gb RAM. Not sure why you need 32gb. Get a 2x8gb kit.

Stock cooler is alright for tbe 3700x, albeit a bit loud. Just make sure you have decent case airflow for the GPU and CPU.
