Build Advice Thoughts on Ryzen 9 Build for $3,000

Hi, its been 10 years since I've updated my desktop. I consider myself more of an intel person but AMD has me thinking otherwise. Currently have an i7-970 on an Asus X58 Sabertooth, 6gb ram being pushed its limits by 4K video rendering plus the desire to get into sim racing has me looking at a new build. Let me know if I could spend money better, the current spec puts me just under $3,000. My goal would be that this would last me another 5+ years.

Secondary question: am I spending money unnecessarily?
Should I be looking at a 3900 CPU, 32GB of ram, 2070 GPU because the gains are unnecessary/not needed for my use or minimal for the amount of money?

Checked over the weekend, could find everything but the PSU and desired AIO. Could do a Corsair PSU and smaller AIO. All at fair prices as well, not paying inflated C-19 prices.

Knew I should have pulled the trigger over the weekend but its a lot of $ and I always sleep on purchases like this for a few days. Can't find the MB anywhere now.
