Any advice (if its worth the jump from 500 to 600 series) would be appreciated.

You could sli two gtx 670 for the multimonitor setup
The jump from 500 to 600 is very worth it, especially in the high end parts.

You don´t need anything more to be upgraded just try to Oc that i5 with an aftermarket cooler like the 212 evo and you´re good to go.

Yeah I'd definetely recommend throwing a bit more out and trying to get dual 670s.... Even with reference and bone stock 670s you'd have some blistering performance figures, and they're really the best price/performance by far in the upper-end of the market.
I have a EVGA GTX 670 FTW btw and It's been flawless for me.

... disregard, it meant exactly what I thought it meant lol
