Torn between AMD or Intel

I’m torn between an 8700k or a Ryzen 2700x/3700x (in spring). I usually game, make 3D models, and video edit on my computer. Which one would be better?

what gpu in mind?
what games, resolution and fps desired?
ratio between games and productivity work?
other components?

I have a 1070 ti and I play rainbow 6 and games like it. I only need 1080 @240hz or 1440 @144hz. I usually play games and work equally. I have a b250 motherboard so I will have to upgrade socket. I currently have an i5 7500 with 16gb of ddr4.

I suppose the ram is 2400 or 2133 speed?
In that case, go with the Intel route.
Simple update is snatch a 7700 for cheap and you are done.
