My old PC needs to be retired. Its been a while since I looked into new parts. It going to be used mostly for gaming and streaming/recording. With a little video editing and 3d rendering. Im also still deciding if i want 32 or 64 gb ram, and 1 or 2 graphics cards. How does this build look? Anything im missing? Thanks!

Kind of wasting money in a lot of places, here's what I think will be a better build in looks and performance.

While Ryzen is certainly good, This is still better, and the extra cost does equal the improved performance fairly:

CPU: Intel - Core i7-7820X 3.6GHz 8-Core Processor ($599.00 @ Amazon)
CPU Cooler: NZXT - Kraken X62 Rev 2 98.2 CFM Liquid CPU Cooler ($159.99 @ B&H)
Thermal Compound: Thermal Grizzly - Kryonaut 1g 1g Thermal Paste ($11.99 @ Amazon)
Motherboard: Asus - PRIME X299-A ATX LGA2066 Motherboard...

Do you mind going with ryzen? Same performance for a lot less.
Also don't use sli it's pretty much done as almost no games support multi gpu anymore and it tends to give a lot of issues anyways.

I was undecided on the SLI or not for the money and compatability problems. And I have just always used intel in the past. Never really looked into the AMD ryzen. But I may be open to it.

No but seriously if you're going to go with that premium level system with custom liquid cooling, go with something swankier for a case. Show it off a little.
I agree on the sli. Its support is dwindling instead of rising among game developers so impact may be marginal.

And ive never been good at adding up power supply needs. Would a 850 be enough for a single GPU along with everything else, or should i go with a 1000. I will also be overclocking this.

Lian Li cases are known to be of high quality, perhaps scan through their offerings. Case selection is the most subjective individual component to system builds.

I'd go for something designed to be a showpiece. Like a lot of thermaltake cases. Here's a few:
http://thermaltakeusa.com/Chassis/Super_Tower_/The_Tower/C_00002974/The_Tower_900/design.htm
or
http://thermaltakeusa.com/Chassis/Full_Tower_/Core/C_00002998/Core_X71_Tempered_Glass_Edition/design.htm
http://thermaltakeusa.com/Chassis/Cube_Case_/Core/C_00003042/Core_X5_Tempered_Glass_Edition/design.htm

Or if you're into more normal looking towers, get one of Phanteks's full (luxe tempered, elite) or roomy mid towers (like enthoo evolv atx) that come in tempered glass edition. Or Corsair's crystal series though I do not know if they'll be big enough. but they're tempered glass on all sides, can't get much more showy than that.
http://www.corsair.com/en-us/landing/crystal570x
though this last one lacks a spot for a fan controller.
It really depends on your taste in cases. But if you're spending this much on gear, it'd be a shame not to show it off and make it look fantastic.

I think ill drop it to a single 1080ti.
32 gb ram instead of 64.
The corsair obsidian 900d case.
And 850 power supply.
Saving about $1000.
Making this the new list.

With a ryzen 1800x + 350 board you will pay under half of the current i7 + motherboard and lose about 15% performance. Up to you if the big expense is worth it. Btw ditch those noctua fans your kit includes more than good enough fans.

That said... you're still overspending for what you want to do I think.
