Triple screen stretching. Any solutions and why?

In games the side monitors stretch out the image quite a bit (Depending on your FOV) Is there any way to avoid stretching and project the image on the side monitors as normal?

You are likely describing the "fish-eye" effect. Stuff on the middle monitor looks normal, stuff on the sides gets stretched-out (kinda zoomed-in too) the further to the right or left you are looking. It's normal to see that effect. What you should try is a program like Flawless Widescreen. FW has a bunch of different game plugins that can help make menus appear more natural and some games you can use a slider to make adjustments to the FoV depending on your own tastes. FW will also fix AC4: Black Flag so you can play it properly. There is also a program called Widescreen Fixer. Give those a try.

And yeah, as OriginalCadaver mentioned, make sure the game's resolution is set properly to your eyefinity resolution.

Fish eye effect is exactly what I am getting.
The question is why does the game do that and why can in not just project in a normal way?
Should my FOV be setup to a certain point?

And my resolution is set up to my eyefinity resolution.
 
My understanding is that fish eye effect occurs because the game engine is not able to scale a very high horizontal FoV perfectly. It's unfortunately a trade-off that is unavoidable in most situations. The lower the FoV, the less fish-eye effect but lowering the FoV also reduces how much you can see : \ So you'll have to fiddle around with each game's FoV to see what works for you.

I've been gaming on three screens since 2010 and fish eye doesn't bother me much. You spend most of your time centering your vision on the middle screen, the side screens are mostly just for immersive peripherals anyway. Sometimes, depending on the game, I find the fish eye effect somewhat useful since it kinda zooms-in the stuff on the far right and far left allowing me to spot things that may not be easily spotted when they are centered on the middle screen. Does that make sense?
 
How about if you had 3 cameras facing in 3 different directions.
In case of elite for example, you could have one face forward and 2 to the sides.
Basically if you split the cabin in 3 60 degree parts and point a camera at each of them? That would give you 180 degree of visibility without the fish eye effect. Am I right?
