The LGA 2011 motherboards are expensive, you should get LGA 1151 motherboard instead with Xeon 1231v5 if you need hyperthreading. For gaming higher core clocks are more important than having Hyperthreading.

Here is a build with Xeon, if you don't need hyperthreading you can save some money and get the second build.

How about a GTX 1060 instead of rx 480

RX 480 have better price performance than GTX 1060, it offers same performance in direct X 11, but in direct X 12 RX 480 is much better. Also the RX 480 has 4gb, while the GTX 1060 has only 3GB which is not enough for modern games. If you don't need Nvidia CUDA cores for programs like Adobe After Effects or Blender, then RX 480 is much better option, and it is more future proof.

Also with latest drivers RX 480 gained much performance, the old reviews where GTX 1060 was better don't hold up anymore. Here you can read a detailed review of RX 480 vs GTX 1060 with newest drivers.
