TV Tuner on NAS?

I have been in the process of planning a retro fit of an old Optiplex 760 into a home server/NAS. Just as soon as I get ready to pull the trigger on some components, I come up with another "idea" for this build. I am primarily seeking a storage solution and media server for the household as well as some other server tasks via Amahi or freeNas.

My latest question/idea is if I should/could use this server for the TV tuner I have so that I can record anytime (server will be on 24/7) as opposed to the HTPC (live TV is not needed). Reason being is two fold: first, the HTPC is only running a 120GB SSD and two, I do not want to have to keep two machines on 24/7. Is this feasible or even possible for the server due to the OS? Another wrinkle is that I would like to use one of these two machines (preferably the server) to convert VHS tapes to mpeg2. Is there a possible dual boot that I could do for this build so that I could have the server running in the background while I have access to these other functions?

As I've stated before, I am nearly a novice when it comes to networking but I have been reading like a crazed mad man the past week or so. A do-it-all desktop/server is what I'm after I guess. I'm sure I would be better off having a dedicated server and beef up the HTPC a little but the wife would sure like for me to move my "crazy nerd shenanigans" out of the living room and into the office. It would be great if I could get this done with this build. I guess I'm like most Americans, I like to eat fish...I just don't want it to be fishy tasting!

Components
This is still up in the air and I would like to keep purchases to a minimum.

TV-tuner~$80
HDD got my eye on some WD reds @ $50/1TB
Possible RAID card~$25

I wouldn't expect many TV tuners to be compatible with FreeNAS (when used as an OS). If the desktop had a Windows OS installed and FreeNAS was installed as a program, then it will be fine. If you used a Linux distro as the desktop OS, just make sure that the TV tuner will be supported.

It's certainly possible to dual-boot an OS, but I suspect what you want to do is run two different operating systems at the same time, rather than simply having two different operating systems installed on the same PC (which is dual-boot). The only way to run two operating systems simultaneously is to use virtualisation, and you'll need a reasonably beefy PC for that.

Yes, I would like to be able to run the server software (on a separate array) inside windows 7. How beefy of a PC are we talking? I have been considering two different Server OS: freeNAS (more resource heavy as I read it), and Amahi (slimmed down somewhat).

I guess my main concern would be if the system is unstable and prone to crash...
