Two 1080 or one 1080

So after purchasing two 980ti then watching the whole 1080-1070 announcements then quickly tearing the two Gtx 980ti out of my rig and returning them to the store I had purchased them from I am caught in a dilemma.
So I currently have one Asus pg279q awesome display btw.
My dilemma is, should I purchase two Gtx 1080 and run them on a single 1440p display or purchase one Gtx 1080 and another 1440p display
System runs on a
Intel 4790k
16gb ddr3
2x 500gb ssd
1x 1tb western digital black hdd
Windows 7 (64 bit)
1000watt evga super nova psu
Asus z97 hero mobo
 
Honestly I would have kept the two 980 Ti's and replaced them only when the 1080 Ti's release in another 7-9 months. I think that I'm done purchasing anything but the top tier cards.

But if the choices are two 1080s and 1 display OR one 1080 and 2 displays, I'd go with the latter option. Here are my questions: Do people traditionally game on two displays? I know that many game on one display or triple monitor setup, but I wonder if one display is common. I too want a 2nd 1440p display but mostly for twitch watching and discord conversations. My other question is, what games do you spend the most hours playing? I'm curious to get an idea of how many FPS you achieve on one 1440p monitor.
