Three cards would be hotter and offer no more expansion. I'd go with the 2x670 to keep the heat down for similar performance:

I couldn't find any I'd get that would keep you under $600, but I'd go with the 670s. Then you could always get a third 670 at a future date, but your resolution doesn't require two 670s? Are you going to get a couple additional monitors for 2D surround?

Also, there is no real reason to go beyond 2GB of RAM on the video card at this point in time; even in surround.

Id still go with 2x670s, because 3 670s in the future is still better than 3 660s. If I were going to halt all upgrades on the system, I'd go for the three 660 ti now.

But still, a single 670 would max out everything at that resolution.
 
This has got to be a troll. A Pentium with two 670s?

OP, if you aren't just trolling, buy yourself a single 4GB 670. Even with three monitors, at that resolution, you won't need more.

If you do get 2 670s or 3 660tis, you'd just be wasting your money, because your CPU would be bottlenecking your graphics setup big time.
