Two Graphics Cards vs One Graphics Card

So, I'm going to be building my first Gaming PC in a few months! :bounce:

I've been doing some research and I'll be going for the Asus GTX 560 TI DirectCU II Top graphics card overclocked to 900MHz.

The question is: is it more beneficial to have two graphics cards (in this case, two of the graphics card mentioned above) rather than one?

What are the advantages?

If I have two Asus GTX 560 TI DirectCU II Top cards, will it consume more energy when playing a demanding game like Crysis 2 versus just having one?

Note: I will be playing in 1920x1080 resolution.

If you have two GTX 560 TI graphics cards, then of course they will consume more power than a single GTX 560 TI. How much? About 2x more. Makes sense?

I never SLI'ed or XFired two video cards together. I prefer a single powerful video card. due to less potential issues such as:

1. Not all games support SLI or XFire. But I assume the more popular big budget games will.
2. Less potential driver issues.
3. Some people complain about micro stuttering in some games.
