Hi! I have been thinking about changing OS from Windows 10 to Ubuntu 16.04. Mostly because of the open-source potential. Would getting Ubuntu, dramatically change the way my pc works, and could I still play most games?

Quicken is another program not available on Linux. I really like Linux Mint, but keep it on a USB3 flash drive where I can boot it up and be running in about 45 seconds. Bear in mind that Linux uses a different file system and loader, so if you install both Windows and Linux on the same system, they can coexist until you make partition changes. Then the Grub loader will fail to boot either system. There are ways around this, but it's definitely something to be aware of before making the plunge.

Good luck.

So me trying to either play games, or using photoshop wouldn't work?

games are unlikely to be made for Windows AND Linux, though some Steam titles apparently are available on both. i haven't tried it.

photoshop isn't available on linux, but GIMP is and it's very well regarded (and it's also available on windows, so... yeah, you can use GIMP everywhere). if it's for personal use, GIMP is likely more sensible as are most open-source programs (LibreOffice instead of MS Office). if it's for professional (meaning PAID JOB) stuff, then the cost is typically recouped soon enough so open-source isn't worth it.
