Question UEFI Issue

I've never seen this before in my years in IT.

I have an older ASRock AB350M where the UEFI interface went haywire. I'll post a pic below.

What I've done to this point:

1. Updated the BIOS
2, Reset UEFI to default settings from inside BIOS
3. Pulled the MOBO battery for about 10 minutes

I really can't come up with any other ways to troubleshoot this problem. It wouldn't bother me too much if I could navigate but it's just 'stuck' like in the pick below. No mouse, no up down arrow. I have three separate drives on this PC (Windows, Mint, Fedora) and prefer hitting F11 to enter UEFI if I don't want to go into the default OS.

Is it just the boot selection that is like this? You mentioned you were able to reset the settings from within the BIOS, so I'm assuming that he setup utility works fine?

This is just going out on a limb here, but some Asrock boards, especially from this era have a setting which changes the resolution of the setup utility. This may be called "Full HD UEFI" or similar. Try toggling this.
