I'm going to be running a gtx 1080 and im looking into ultrawide monitors. Which resolution should I use if I want to run all my games above 60fps on ultra? 2560x1080 or 3440x1440?

Solution

it is hard to tell . But in General Cards get slower for games when...
depends on what your games are ... but in General , you will be okay with a GTX 1080 and 3440x1440 , if you can pay for a 3440x1440 without a problem , I would suggest that you pay more and get the GTX 1080 ti and the better screen .

If you cant do that , still stay with the 3440x1440 and lower the details a little to get above 60 fps ... for those monitors put the ultra wide 1080p to shame

How lonng do you think the 1080ti will last for gaming until most games drop below 60fps on ultra? Because i saw that there were one or two already dropping below 60fps

it is hard to tell . But in General Cards get slower for games when new Game engines appear ... I think that the GTX 1080 ti will serve you well for at least two years. by the way , dont think much about the future ... enjoy what you have at the moment.

Also , you can always sell your old card and get new one when your card becomes slower for new games . in General , the Monitor stays longer (I change monitors every 6 years) and the GPU card gets replaced more often... so pick a very good monitor .
