I'm thinking about buying a new Thinkpad. I've had a T14 for several years and been pretty happy with it.

I'm finding it a little hard to choose between similarly speced T14 and P14s. T-series is supposed to be the core business model, while P-series is the mobile workstation. However, P-series seems generally cheaper for models with nearly the same specs. Why?

Here are two off-the-shelf models, both with AMD processors (which is what I want):

ThinkPad T14 Gen 5 AMD (14″) - Eclipse Black
AMD Ryzen™ 7 PRO 8840U Processor (3.30 GHz up to 5.10 GHz)
16 GB DDR5-5600MHz (SODIMM)(2 x 8 GB)
512 GB SSD M.2 2280 PCIe Gen4 Performance TLC Opal

$1,165.45

ThinkPad P14s Gen 5 AMD (14″) Mobile Workstation
AMD Ryzen™ 7 PRO 8840HS Processor (3.30 GHz up to 5.10 GHz)
16 GB DDR5-5600MHz (SODIMM)(2 x 8 GB)
512 GB SSD M.2 2280 PCIe Gen4 Performance TLC Opal

$1,089.00

I've made sure other features (non-touch screen, camera, etc.) are the same.

It gets harder for other specs. I would probably want 32GB or 64GB RAM, but there are no off-the-shelf direct comparisons. There's a P14s with 64GB RAM and 1TB SSD for only $1,149, and trying to get the same specs on a T14 is a lot more expensive, presumably because of the custom configuration.

The obvious difference is the U vs. HS processor. What is actual impact on battery life?

Other than that, what are the other differences (materials, build quality, non-obvious features) that would help someone choose one over the other?

Very little real world difference. The HS has power draw of 20-30W and U has 15-30W, making the HS marginally better performer and the U slightly more power efficient (probably not noticeable at all). So the P14 gets a slight edge in maintaining "Peak Performance" (highest CPU clock perfomance for longer duration). Also, the P series has a better battery (52.5 Wh). I would go for the one that pinches the pocket less (P14).
