Unplugging some radiator fans

I have thermaltake's 360mm AIO water cooler. As it is a 360mm radiator, there are 3 120mm pwm fans associated with it. Can i either a) unplug two of the pwm fans from the 3-to-1 cable it comes with, or b) route two of them through a switch to turn them on/off and back to the 3-to-1, so as to only have one fan on to maintain a low idle noise level and all 3 fans on under load, or is this impractical/causes temps to rise too much?

I have a cm haf 932 case with every spot for a fan filled in (which probably adds more noise than shutting off two of the 120s could negate anyway), so there is plenty of airflow.
 
1| Which AIO by Thermaltake are we looking at? Are we talking about the Water 3.0 or the Water 3.0 Riing variant? If te latter then you're going to have to disconnect the fan you don't want as rerouting to a fan header would be impossible since the fans on the Riing RGB pack are proprietary.

you can have the fans set to a custom fan curve to lower their RPM's when the system's idling. The added bonus to the Water 3.0 Ultimate variant is that you can use pretty much any 4 pin PWM fans for your AIO which will aid you in selecting a fan meant for radiators and also a set that is low noise. The only argument you can make is that you're adding more cost to an AIO that was meant to run as a kit out of the box.
 
I have the ultimate, non-riing. My problem is that even setting a curve to "0%" under x degrees has the fans at 1000 rpm; that seems to be their minimum. So the next step is unplugging them it seems.
