Question Upgrade Path Suggestions

Hi everyone. I currently have a Ryzen 7 3800x with a GeForce GTX 1080. 16 meg of ram and a X570 (Asus TUF Gaming) Motherboard. I am debating upgrading my computer and can't decide which path, if any, makes sense. The options are:

1. Upgrade to Ryzen 5 5600x
2. Upgrade to Ryzen 7 5800x
3. Upgrade video card to something faster...

I am not inclined to go down path #3 as the prices are so whacky right now (and for the foreseeable future) so I am wondering if upgrading my CPU will help with gaming (FarCry 6, Assassin's Cree Valhalla, CyberPunk etc.). I also do a considerable amount of work with large PDF files (200 meg +) that seems to need processing power...

Any suggestions would help...even if it is stay with what I have for now... Thanks!

What are you trying to accomplish with the upgrade?

So my monitor resolution is 3440 x 1440. I want to maximize the image quality while maintaining 60 FPS. Right now with FarCry6 for example I can't run highest detail settings and even on one step down it drops below 60 FPS at times...

You are GPU limited. You need a faster GPU if you want more fps at that resolution. The RTX 3080 Ti will provide you 121% more fps.
