Upgrade PC Gaming - Help

A year ago I got a GTX 1080 but I couldn't use it much since I had no free time. Now that I can play again, I would like to continue to upgrade my PC. I would like to play in 2K 144hz o 165hz.

This is my 2013 build (with the 1080 from last year):

CPU Intel Core i5-4670K

I was thinking of upgrading my CPU, RAM, PSU with these:

CPU Intel Core i7 8700
RAM Corsair Vengeance RGB 16 GB (2x8 GB), DDR4 3200 MHz
PSU Seasonic PRIME Ultra 750 Gold or EVGA SuperNOVA 80+ PLATINUM 650W (which one is better?)

What do you think?
I should get a MOBO that supports DDR4, but since I'm not interessed in overclock I really don't know which one to get. Do you have any suggestion? For the Mobo I have a budget of 250€ max.

I am open to make a switch to AMD ryzen since I'm upgrading a lot of components, but I always used Intel and I don't know much about ryzen. Maybe I could save some money?

I could change the processor with a Ryzen 7 2700 and I would save some money... then which MOBO should I get?

Could you give me a suggestion both on Intel and AMD?

Intel will give you superior performance in games, with the exception to 4k resolution, due to it's ring bus architecture and 1ghz+ boost clocks over AMD. I advise Intel over AMD if you are going high refresh rate gaming, at 1440p or lower resolutions.

I would get a new PSU, no matter what. I would see what your performance is, with what you have, before doing anything else. 2k and 4k gaming are more GPU dependent, than CPU dependent, in most cases.
