I recently upgraded to an RTX 4080 FE and a Neo G7 32" monitor. I am now going 4k for all my gaming. I am running a 3900x CPU on my trusty old Crosshair VI motherboard. From a practical perspective, would there be a gaming improvement by going to a new AM5 MB with something like a 7900X or the soon to be 7900X3D?

If you look at all the benchmarks for cpu chips they use 1080p for comparison even when they use a 4090. It seems almost all games are gpu bound espeically at 4k.
They get stupid numbers like comparing 600fps to say 650fps but if they use higher resolutions everything gets the same number so pretty much all cpu test the same which is just as useless.

3900x is pretty old so a upgrade might help but going to the most expensive top end cpu if your only use is going to be gaming likely is not the most cost effective choice.

If I had to guess the 7800x3d is going to be best option of the 3 new x3d chips. The discussion I have seen about the 7900 and 7950 version is they do not have the cache on both chiplets. We already have issues with pcore and ecore scheduling in windows.

Since they have denied the rumor of feb 15 who know when we will see how well these really work and if they are going to be stupid about the costs.

I think where the X3D excels is raising the minimums. But it's a lot of money to spend for pretty small gains. Deal with what you have for as long as you can, high fps 4k is still a few gens away.

But if you have the itch to upgrade maybe consider dropping in a 5800x3d. It might improve any intermittent lag. After selling the 3900x, shouldn't be much out of pocket.
