I currently have a ryzen 5 1600 paired with a asrock b450 m board and was wondering if upgrading to a 2600x or a 2700x would be worth it or just wait for newer cpus to release and buy a x570 board.

You should probably just list your full system and monitor specs here so that we have some idea of what components might be limiting gaming performance on your system.

As for the initial question, no, that wouldn't be a worthwhile upgrade. At stock clocks, a 2600X will only offer around 15% more CPU performance than a 1600, and with an overclock, the 1600 will offer nearly the same level of performance. You would be better off overclocking your 1600 if you want to get a little more performance out of it. Ryzen runs best on a relatively fast, dual-channel (2-sticks) kit of RAM too, which could also make a difference if you have it paired with slower RAM.

The 2700X won't be much faster, since the main thing it adds are more cores, which current games won't tend to utilize anyway. The 3000-series processors (like the 3600) perform around 15% more instructions per clock, and push slightly higher clocks, so those could be a bit more of an upgrade. However, unless your graphics card is relatively high-end for the resolution you are running, and you have a high-refresh rate (like 144Hz) monitor that can display those extra frames, you won't gain much from a processor upgrade. Even a 1600 at stock clocks can still provide fine performance for most setups, and depending on your other hardware, something like a graphics card upgrade might be more beneficial.
