So I figured once the Ryzen 7000 series CPUs drop the 5000 will hopefully go on sale and that would provide a decent upgrade from the 3700X my friend uses for both gaming and video editing. Was considering the 5700X for this.

Well, I am already seeing prices go down and getting e-mail adverts for it... but on the 5800X. In fact, the 5800X is now cheaper at Amazon and almost the same price at Micro Center than the 5700X.

Issue is, the 5800X really does not seem worth it at all to consider over a 5700X, even at the same price-points. As GamersNexus put it: "the 5700X is what the 5800X should have been". And it certainly feels that way, they both seem to have the same specs, core count, threads, cache... the only difference being that the 5800X has slightly higher base and boost clocks.... but a massively 40% higher TDP over the 5700X.

In some benchmarks the 5800X also seemed to slightly under-perform... somehow, although in others it out-performed the 5700X.

Is there any benefit to the 5800X over the 5700X for either gaming or video editing/encoding? Everyone seems to be glossing over the 5700X to try to put the 5800X on sale instead. Or am I jumping the gun and there is a good chance prices will be discounted further if we wait more? I just worry if we wait too long they will just clear the shelves of the 5000 to make room for the 7000s and then they will be hard and more expensive to get.

I had always intended for my next build to use the 5700X, sadly not to be but that's not the point.

I think this may be a good time to buy. I have been getting a ton of adverts as well, giving away games and all sorts of things if you buy a CPU on Labor Day. You can probably even find a MoBo CPU combo deal right now. Price will eventually drop more but so will supply.

Can't really predict (near)future pricing but Zen3 production will not cease immediately, probably a year or two so it also depends on Zen4 sales.
My usual suggestion to chose between 5700x and 5800x is to choose according to cooling solution. 5800x needs much better cooling, even to the point of 360 AIO while 5700x can go with mid range air. That's of course if you want to get every ounce of their performance. 5800x got that frequency advantage at expense of higher TDP. So, if you plan on keeping processor at near defaults, 5700x makes more sense. If you can't cool 5800x properly it would just run at 5700x's performance.

If it is a gaming PC, than 5800x3d.
Agreed. I did exactly this, from a 3700X to a 5800X3D. I am pleased with the upgrade but it wasn’t a massive jump, it was a reasonable boost to performance especially the minimums and I feel worth it when paired with my 3080 and a 1440p 240Hz monitor. I do wonder how noticeable a smaller jump to a 5700X/5800X would be.

Respectable

That's one of the causes, why I do not upgrade, because my PC is running so great and rockstable, that I would be afraid to endanger the stability.

But that's for now, may be in the future I will revise my opinion.

I tried some games with limitation to 100 fps, and to be honest, I did not see any difference to 144 or even higher fps( resolution 2560x1440). And GPU ( undervolted 1815-1845 with 0.831 V) keeps cool and saves a lot of power( about 200 W with 100 fps). Therefore no need to upgrade, although I could do it at once.
