Even with a GTX770 you will have to OC that CPU past 3GHz to get all out of the card! So I suggest GTX770 which is great for 1080P gaming. Rest of the money can be put aside for CPU/Mobo Upgrade next generation or so.
Is the 700 pound just for the GPU if so I would recommend a gtx 780 ti or maybe even the absolute beast that is the gtx titan would make sure your other component's are up to the job first e.g. Ram/CPU/PSU
overclocking is super easy, it's pretty much just putting a a number in a but of free software (like msi afterburner) and finding the sweetspot. but yea if you don't want to just get the superclocked for $17 more than the regular.

No more than 8gb of ram is really effective in gaming it may make a slight diferance but not massively. A lot if ram will only effect video editing etc

i plan to be video editing. and id hate to waste two sticks of ram that im already currently using. i also plan to stream game play.
