Upgrading from Intel HD 2000 (i3 2120) integrated graphics to a Sapphire Radeon 7750. What do I do with the intel drivers?

Title says it all. What do I do prior to installing the GPU?

You won't have to do anything with the Intel drivers and just load the 7750 with the install disc that you get with the card. As long as the Intel graphics is not being used the drivers will just sit there , they are probably part of the chipset package anyway and best left alone.

well how about download the intel opencl sdk so the cpu can give instructions to the gpu?

you should download gpucapsviewer
http://www.ozone3d.net/gpu_caps_viewer/
and check if opencl is complete filled in
