Upgrading half a system, using Windows 8.1

Hello all,

So my new-ish build looms on the horizon, but I have one last question about Windows 8.1. I will be installing from a bootable USB (obviously not in Windows 7 HP that I have right now because I will be upgrading my motherboard among other parts), but I'm not sure what will be of my existing OS. I will not be upgrading my drives (SSD 530 and 2TB Barracuda), so I'm not sure how to wipe them.

As it currently stands, I'll build my new system and then boot up, choosing to boot into my USB to install Windows 8.1. But that assumes that I have new, blank hard drives that the BIOS can detect nothing on, right? So what do I do?

1) Do I mash F12 repeatedly until I get an option to boot to USB? I read somewhere that the Windows 8.1 installation when pre-boot, will give an opportunity to wipe your drives from the installer before it installs 8.1.

2) Do I format my drives somehow prior to the build? Then after ASRock's BIOS initializes it will say something like "Press any key to boot from (insert whatever device here)"?

The H440 doesn't have 5.25" bays, but I can run my Lite-on drive externally if the USB method is too problematic. My build: http://www.overclock.net/lists/display/view/id/5717106
