Will upgrading laptop RAM TO 16 GB will improve any gaming performance? Because RAM is the only option in laptops? I have i7 7500U with intel HD 620 with 8 gb

Short answer- no.

Longer answer, it's possible that in certain games more than 8gb ram can help smooth out framerate stutters. The problem is that in your situation, using an HD 620, framerate stutters are the least of your problems running games. It's doubtful you can run any game which uses more than 8gb well enough that adding more ram will make any noticeable difference.
