Question Upgrading Macbook Pro 2012 with SSDs / RAID 0

I'm getting a macbook pro 2012 15" i7 quad core and I saw a video showing RAID 0 by replacing the DVD with a SATA SSD, thus giving two SSDs.

However, the link here:

Says:
"You can’t create a RAID set on your startup disk; you must first start up your computer from another disk. "

So I was thinking what is the fastest SATA based SSD I can get and then maybe just get two of them, or figure out how to get RAID going. I guess you boot from USB, then set the drives to RAID 0 and load the OS on them?

Either way, I want the fastest SATA SSD I can get. What I see when I search is the new on board type m.2 or whatever it's called.
